What are grease interceptors?
Grease interceptors are plumbing fixtures that traps grease,
lint or hair to prevent them from entering and clogging up the sewer system.
In more technical language, it's a vault with a minimum capacity of between
500 and 750 gallons that is usually located on the exterior of the building.
The vault includes a minimum of two compartments, and flow between each
compartment is through a 90° fitting designed for grease retention. The
capacity of the interceptor gives the wastewater time to cool, allowing
any remaining grease not collected by the traps time to congeal and rise
to the surface where it accumulates until the interceptor is cleaned.
Where
can you use grease interceptors?
Grease interceptors are used in kitchens, restaurants,
meat processors, food packagers, cafeterias in schools, churches, prisons,
hospitals and institutions, and all types of food processing areas where
waste water contains grease, fats and oil. They
are installed on waste lines which can receive grease from dischargers
including, but not limited to, wash sinks, food preparation sinks, floor
drains, automatic dishwashers or similar plumbing fixtures in all restaurants,
kitchens, cafeterias, clubs, delicatessens, fish markets or any place
where grease may be introduced into the drainage system. Interceptors
are usually required for high volume restaurants (full menu establishments
operating 16 hrs/day and/or serving 500+ meals per day) and large commercial
establishments such as hotels, hospitals, factories, or school kitchens.
Grease traps are required for small volume (fast food or take-out restaurants
with limited menus, minimum dishwashing, and/or minimal seating capacity)
and medium volume (full menu establishments operating 8-16 hrs/day and/or
serving 100-400 meals/day) establishments. Medium volume establishments
may be required to install an interceptor depending upon the size of the
establishment.
Lint and hair interceptors are installed on lavatories
or sinks in dormitories, motels and beauty salons. Intercepts hair and
sediment which is commonly encountered in these areas. Serves also as
a safeguard against losing rings and other valuable jewelry due to accidental
dropping into lavatory drain. Unit is easily cleaned by removing cleanout
plug on bottom of body and dropping perforated basket.
